Method

- Preheat the oven to 225°F and line 2 baking sheets with parchment paper.
- Put the meringue mixture into a pastry bag fitted with a plain tip and make 1-2 inches diameter meringues with a swirl on top.
- Bake for 1 hour, then turn off the heat and leave the meringues in the closed oven for several hours or overnight.

- Bake in the center of the preheated oven for 40-50 minutes or until crispy. Leave to cool on the baking sheet on a wire rack.
Caramel
- In a saucepan, stir the sugar and water over low heat until the sugar dissolves.
- Bring the sugar to a boil, simmer gently, and brush the sides of the pot with a brush dipped in cold water for about seven minutes or until the mixture turns a dark amber color.
- Turn your face away and immediately pour in a third of the whipped cream – the caramel may sizzle for a while. Cook for another minute or two or until all the solidified caramel has melted.
- Stir in the margarine and let cool.
- Decorate the meringues with the finished caramel according to your taste.
