Christmas Walnut Filled Crescents

These crescents/rolls are some of the best recipes that come from Slovakia. It is made from homemade puff pastry and filled with ground walnuts or poppy seeds. Prepare the best treat for your visit: another delicious cookie with poppy seeds.

Ingredients

For the dough

  • 2 1/2 cups all-purpose flour
  • 1 1/4 cups margarine (Bleu Bonnet)
  • 1/2 teaspoon salt
  • 9 oz vanilla yogurt

For the nut-filling

  • 1 cup walnuts, ground
  • 1 cup powdered sugar
  • 1 egg white (save the yolk for later)
  • 1 tablespoon rum
  • 1 tablespoon vanilla

For smearing

  • 4 egg yolks
  • 1-2 tablespoons of milk

Method

  • Place all the ingredients for the dough in a bowl.
  • Mix all by hand into a soft, slightly sticky dough.
  • Place the dough in a plastic bag and put it in a freezer while making the filling.
  • Mix egg white with rum and vanilla in a medium bowl to make the filling, and add nuts and sugar. 
  • Stir and spoon it out in a corner of a medium zipper bag. Twist the bag tightly around the filling.
  • Dividing the dough out of a freezer into 6 identical balls.
  • Flour the surface on which you are going to work.
  • Roll each ball into 0.2-inch thick circles. Cut each circle into 6 widgets.
  • Place the broad side of the widget closer to you. Cut the corner off the bag with filling, and squeeze some filling alongside the longer side of each wedge.
  • Start rolling the the dough toward the other end.
  • Spray the baking sheet with nonstick spray. Place about 12 crescents on one sheet. Make sure the filling on the edges is pointing up.
  • In a small bowl, mix egg yolk and 1 tbsp of water. Brush the egg wash on each crescent.
  • Preheat the oven to 360°F and bake for 20 minutes.
  • After the crescents are done, coat them in 2 parts powdered sugar and one part granulated sugar.
  • Let cool before eating.

Brioche Croissant With Poppyseed Apple Filling

These are the best brioche croissants.

They are really soft and fluffy, filled with a poppyseed-apple filling. But there is no limit. You can also fill them with a nut filling or Nutella.

Ingredients

  • ½ cube of fresh yeast
  • 8 ½ oz Milk
  • 5 tablespoons sugar
  • 10 ½ oz pastry flour
  • 1 pinch salt
  • 1 egg
  • 3 oz butter

For filling

  • 4 oz ground poppy seed
  • 2 apples
  • 1 cup powdered sugar
  • 200 g of ground poppy seeds
  • 1 teaspoon cinnamon powder
  • a little grated lemon peel
  • 3 oz butter

For smearing

  • 1 egg yolk
  • 1 tablespoon of milk

Method

  • Dissolve the yeast in 1/2 cup lukewarm milk. 
  • Mix flour with 1/3 cup sugar and 1 pinch of salt in a bowl.
  • Make a well in the center. Add yeast mixture, egg, and 1/2 cup butter cut into small pieces to the well. 
  • Knead with the dough hook of a mixer until smooth; add extra flour or lukewarm milk if necessary.
  • Cover and let rise in a warm place for about 1 hour.
  • Bring the poppy seeds and remaining milk to a simmer.
  • Add remaining sugar and remaining butter, stir into a thick paste, and allow to cool.
  • Squeeze juice from lemon. Peel apples, cut into quarters, core, dice, and immediately toss with lemon juice.
  • Roll out dough on a floured surface to approximately 1/8 inch thick.
  • Cut 6  (3 x 3 inch) squares and cut diagonally.
  • Cut it into 8 equal triangles.
  • Sprinkle the triangles with the poppy mixture and diced apple, leaving a small border. 
  • Roll up from the long side and shape into crescents.
  • Place on a parchment-lined baking sheet.
  • Bake in an oven preheated to 350°F for 25-30 minutes. 
  • Remove, let cool, and dust with powdered sugar to taste.

Creamy Nut and Poppyseed Crescents

The Christmas Creamy Nut Crescents look beautiful and taste great with, for example, homemade Eggnog.

Ingredients

  • 2 cups all-purpose flour
  • 2 cups butter
  • 1 egg yolk
  • 2 heaping spoons of powdered sugar
  • 1 cup sour cream
  • 1/2 teaspoon baking powder
  • pinch of salt

Nut filling

  • 2 cups ground walnuts
  • 5 spoons of powdered sugar
  • 2 spoons of vanilla sugar
  • 1 teaspoon of cinnamon
  • 1 oz rum
  • 1 oz milk
  • 1 tablespoon of apricot jam
  • half orange zest

Poppy filling

  • 2 cups ground poppy seeds
  • 1oz rum
  • 1 oz milk
  • 6 spoons of powdered sugar
  • lemon zest
  • 1/2 teaspoon cinnamon
  • 2 tablespoons of plum jam

Method

  • Mix the salt and baking powder with the flour.
  • Add the butter and then add the rest of the ingredients.
  • Knead the dough.
  • Wrap the dough in foil and put it in the fridge for an hour.
  • Mix all the filling ingredients in separate containers and cover with foil.
  • Divide the dough into two parts, then roll the first into a rectangle on a floured surface.
  • Cut it into 3-inch wide slices, then cut the slices into 2-inch triangles.
  • Add a teaspoon of nut filling to the broader side, then roll up.
  • Do the same with the second part of the dough, but fill it with poppy seeds.
  • Bake in a preheated oven at 350°F for about 15 minutes.
  • The crescents are ready when the dough puffs up a little.
  • While the cookies are still warm, roll them in powdered sugar mixed with vanilla sugar.
