Don’t know what to prepare unconventionally for a New Year’s Eve celebration or party? Try this delicious spread!

Ingredients:

  • 2 finely diced stalks celery
  • 3 finely grated medium carrots
  • 1/2 cup parsley root
  • 2 thinly sliced scallions
  • 1/2 cup mayonnaise
  • 1/4 cup tartar sauce
  • 1 teaspoon grated lemon zest plus 1 tablespoon juice
  • salt and pepper to taste

Method:

  1. Wash the root vegetables and boil them in lightly salted water for 8-10 minutes.
  2. Boil the onion with the vegetable water.
  3. Allow all vegetables to cool.
  4. Afterward, finely grate the celery, carrot, and parsley on a grater and chop the onion.
  5. Mix all the grated vegetables in a bowl.
  6. Add mayonnaise and tartar sauce.
  7. Mix thoroughly, and season with salt, pepper, and lemon juice.
  8. Chill in the fridge before serving.

Smoked Mackerel Pate With Horseradish (Fake Lobster Spread)

The unconventional combination of mackerel, cottage cheese, and carrot makes this spread a truly great gourmet experience. Smoked Mackerel spread is very easy to make and healthy, too. It’s a delicious creamy pate full of incredible flavor. The horseradish gives it a nice kick. Making it at home means you can flavor it to your liking.

Ingredients:

  • 1 cup smoked mackerel
  • 2 tablespoons creme fraiche or thick natural yogurt
  • 1/2 cup carrots
  • 1 tablespoon sour cream
  • 1/2 onion
  • 1 teaspoon Horseradish Sauce
  • ½ lemon (juice and zest)
  • salt and pepper to taste

Method:

  1. Remove the bones and skin from the smoked mackerel.
  2. Put the pieces of fish meat with creme fraiche or thick natural yogurt and horseradish paste in a food processor.
  3. Process briefly.
  4. Add grated carrot, chopped onion, lemon juice, and sour cream.
  5. Mix thoroughly and taste.
  6. If necessary, season with salt and pepper or add more lemon juice.
  7. Cool the smoked mackerel spread in the refrigerator before serving.

Lobster can also be replaced with a piece of fish fillet. You can replace mayonnaise with a combination of white yogurt and sour cream.

Ingredients:

  • 7 oz fish fillet (e.g. cod)
  • 3 oz celery
  • 2 oz carrots
  • 1 apple
  • 3.5 oz mayonnaise
  • 1 teaspoon full-fat mustard
  • fresh juice of half a lemon
  • salt and pepper to taste

Method:

  1. Simmer the fish fillet for a few minutes until soft.
  2. When the fillet cools down, finely grate the carrot, celery, and apple.
  3. Celery and carrots can be briefly stewed if desired, but it is unnecessary.
  4. Mash the selected fillet with a fork and remove any bones.
  5. Squeeze the apple to remove excess juice.
  6. Add the carrot, celery, and apple to the bowl with the mashed fillet and mix.
  7. Add the mayonnaise and combine everything thoroughly.
  8. Taste and season with lemon juice, salt and pepper.

Before serving, leave the spread in the fridge again for several hours; the individual flavors will penetrate each other better.

Celery Spread à la Lobster

A simple and healthy spread that will delight you not only on New Year’s Eve but also at any other time of the year.

Ingredients:

  • 1 celery
  • 2-3 carrots
  • 1 cup semi-fat cottage cheese in a tub or mayonnaise
  • 1 teaspoon semi-fat mustard
  • fresh juice from half a lemon
  • salt and pepper to taste

Method:

  1. Wash, clean, and finely grate the celery and carrots.
  2. After grating, the ratio of both essential ingredients should be approximately the same, one-to-one.
  3. Add cottage cheese or mayonnaise, lemon juice, salt, and pepper to the bowl of grated vegetables.
  4. Mix, taste, and add more if necessary.
  5. Chill in the fridge for at least an hour before serving.

If you want, you can enrich the spread with a finely grated piece of Eidam cheese.
