Rum balls take less than 20 minutes to throw together, or even less if you involve the kids! No baking is required, and no need to melt any chocolate! You only need a few ingredients to make them, which combine to create a rich, decadent flavor!

Ingredients

  • 9 ounces vanilla wafers/cookies, or plain chocolate cookies
  • 14 ounces sweetened condensed milk (e.g., Nestle)
  • 3 tbsp rum (optional)
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder (e.g., Hershey’s)
  • 1/2 cup finely shredded or desiccated coconut
  • pinch of salt
  • 3/4 cup finely shredded or desiccated coconut (or more) for coating

Method

  • Place the cookies in the ziplock bag, seal them, and crush them with the rolling pin.
  • Alternatively, crush in the food processor until fine crumbs form. It’s OK if there are some slightly larger pieces.
  • Add the crushed cookies, coconut, cocoa powder, condensed milk, rum, and vanilla to the large bowl.
  • Mix the ingredients well using a wooden spoon, then your hands once it gets too thick.
  • Mix in 1-2 tablespoons of milk if the mixture is too thick.
  • Scoop out a tablespoonful of mixture and roll into a 1 – 1 1/2 inch ball.
  • Roll the balls in coconut until completely covered

What you will need

  • 10oz bitter chocolate chips

Method

  • Melt chocolate chips in sweetened condensed milk on the stove or microwave.

These poppy seed balls are unbaked, have only a small number of ingredients, and are relatively quick to make. If you love poppy seeds, you might really like these on your Christmas cookie platter. They are definitely unique!

Ingredients

  • 7 oz pitted dates (soft, not dried), such as Medjool
  • 3 ½ oz ground poppy seeds
  • 2 to 3 tablespoons of water (optionally, you can mix with a teaspoon of honey)
  • 1 handful of whole poppy seeds (any type can be used, but the “blue” variety are especially pretty)
  • blanched and peeled whole almonds (optional)

Method

  • First, pit the dates.
  • Then separate 1 cup.
  • Blend the dates with 1 cup of ground poppy seeds in a food processor or blender.
  • Then, add 2 to 3 tablespoons of water to make the mixture sticky.
  • If the dates are a little dry and/or not too sweet, you can use a little honey (1 teaspoon maximum) as part of the measured amount of water.
  • Transfer the mixture to baking paper and mix into a mass.
  • Divide into four equal portions.
  • Then, shape each part into a log.
  • Cut each log into eight equal-sized pieces.
  • Roll each piece (there will be 32 in total) into balls.
  • Pour a handful or two of whole poppy seeds into a shallow dish.
  • Wrap each ball thoroughly in the whole poppy seed.
  • Optionally, gently press a whole blanched and peeled almond (pointy side down) into the center of each coated ball.
  • Place the balls ideally in paper cups.

Delicious and healthy Christmas balls that you don’t have to bake are vegan, gluten-free, refined sugar-free, and high in fiber. Eat without regrets!

Ingredients

For balls:

  • 1 cup dried unsweetened apple rings
  • 1 cup dried pitted dates
  • ½ cup almonds
  • 2 tablespoons of almond butter
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup vanilla protein powder of choice
  • 1 small gala apple, cored and chopped
  • pinch of salt

Optional for decoration:

  • 1/4 cup gluten-free rolled oats
  • 2 tablespoons granola of your choice
  • 1/4 cup crushed almonds
  • 1 tablespoon of coconut sugar

Method

  • Soak dates in hot water to soften for 10-15 minutes, then drain.
  • Add the dates, dried apples, almonds, almond butter, cinnamon, nutmeg, protein powder, and chopped apple to a food processor and blend for 1-3 minutes, scraping the sides of the processor with a spatula as needed.
  • You should have a sticky but mostly smooth batter.
  • Scoop the batter out into a bow,l and using a tablespoon measure, scoop a slightly smaller than golf ball-sized portion and roll it into a ball using the palms of your hands.
  • It sometimes helps to have slightly wet hands if the batter is extra sticky.
  • Once you have made a little ball, roll the ball into the coating of choice (oats, granola, crushed almonds, etc.), and place the ball on a cookie sheet covered in wax/parchment paper.
  • Do this with the rest of the batter to make around 14 balls.

The preparation of these date balls only takes a few minutes, and they disappear from the plates even faster 🙂 They smell and taste like gingerbread and can be prepared and frozen well in advance.

Ingredients

  • 8 ounces dried, pitted dates
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/16 teaspoon allspice
