Method:

For the dough:

  • 1 cup of almond flour
  • 1/2 cup of softened butter
  • 1/2 package of baking powder
  • 3 tablespoons of sugar
  • Pinch of salt
  • 1 egg
  • 2 spoons of yogurt

For the filling:

  • 3 tablespoons of softened butter
  • a handful of ground walnuts
  • 2 tablespoons of cinnamon
  • 3 spoons of sugar
  • Zest from half an orange

Method:

  • Mix almond flour, butter, baking powder, sugar, salt, egg, and yogurt to form a smooth dough.
  • Roll out the dough on a floured work surface to a thickness of about 0.1 inches.
  • Melt the butter in a pan. Add the ground walnuts, cinnamon, sugar, and orange peel and mix. Allow the mixture to cool well, then brush the rolled dough with it.

But we also find much more fiber, protein, calcium, and potassium in it and much less carbohydrates than in wheat. It is, therefore, suitable not only for celiacs but also for diabetics.

Thanks to the higher proportion of fiber and protein, dishes made from almond flour will keep us full for longer, and we will not be chased by different tastes as much between meals. This, despite the higher fat content, will significantly help us when trying to lose weight.

Make your own almond flour at home

Almond flour is made from blanched kernels. Almond flour is also available, but it is ground from unpeeled almonds and could be more suitable for baking cookies.

So, scald the almonds in hot water, peel them, and grind them into flour in a mixer or coffee grinder. Mix carefully and just for a moment so that you don’t grind almond butter instead of flour.

Remember to keep it for a short time. Due to its high-fat content, it will go rancid if stored for a long time. Therefore, it is better to grind only the amount that you can quickly consume. It will certainly be more economical.

You can keep it in a closed jar in the fridge for a month.
