Ingredients:
- 1 cup all-purpose flour
- 1 pinch of salt
- 1/2 cup of butter
- 2 cups finely grated carrots
- lemon peel
- 1 cream yogurt
- plum jam for the filling
- egg for brushing
- powdered sugar for sprinkling or coating
Instructions:
- Make a smooth dough from flour, salt, butter, carrots, lemon peel and yogurt. Wrap it in cling film and leave it in the fridge for about an hour.
- Divide the cooled dough into three equal portions. From each, roll out a circular plate with a thickness of approx. 0.2 inches.
- Using a sharp knife, cut the circles into eight triangles.
- Place a teaspoon of plum jam on the widest edges of the triangles.
- Roll the rolls into the center of the circle.
- When ready, put it on a baking sheet lined with baking paper.
- Before baking, brush with a beaten egg and bake in an oven preheated to 410°F.
- Bake for about 15 minutes until the rolls are golden.
- Allow to cool briefly, and sprinkle with sifted powdered sugar on top.
Carrot rolls with fruit jam
For making carrot rolls with marmalade, it is best to use firm red berries such as cranberries or currants.
The berries’ tartness complements the sweetness of the marmalade and adds a delightful burst of flavor to your dish.

Ingredients:
- 1 and 3/4 cups of coarse flour
- 1/2 pound of Margarine
- 1 cup of finely grated carrots (about 2-3 medium-sized carrots)
- 1 teaspoon of baking powder
- pinch of salt
- Red Berries Jam
- Icing sugar mixed with vanilla sugar for coating
Instructions:
- Add baking powder to the flour and crumble the margarine with the carrots.
- Form the dough.
- Roll out a sheet about 0.2 inches thick.
- Cut into squares of approx.2.5 x 2.5 inches
- Fill with marmalade, fold over and join into a triangle. You can use a fork to really bring the edges together.
- Place the finished rolls on a baking sheet and bake over medium heat until pink.
- While still hot, sprinkle or roll in icing sugar mixed with vanilla.
To make the work easier, you can use a tipping mold (filled pastry mold) for shaping. Make a circle on one side, then click with the marmalade, and the roll is born!

- 1 egg

Ingredients for the filling:
- 1 cup of ground poppy seeds
- 1 1/2 cups of milk
- sugar to taste
- a little ground cinnamon
- a little lemon zest
- a dash of rum (just for taste)
Method:
- Grate the carrot on a fine grater and mix with the other ingredients.
- Process a smooth dough.
- Let the finished dough rest in the refrigerator for about half an hour, wrapped in foil.
- Boil the milk with poppy seeds and the other ingredients for the filling and leave to cool.
- Divide the dough into 3 parts. Roll out a circle from each piece.
- Cut the circle into 8 parts.
- Put the filling on the wider sides of the pieces and twist them into a roll-like shape.
- Put the finished rolls on a baking sheet lined with baking paper.
- Bake at 410°F for about 20 minutes.
- While still warm, roll in powdered sugar, which you have previously mixed with vanilla sugar.
