Method:

  • First, we prepare the broth.
  • Put the washed remains of carp or other favorite fish in a pot. Add salt, pepper, allspice, a bay leaf, one carrot, one piece of celery, one parsley, and an onion with skin.
  • Bring to a boil and cook over low heat for about an hour.
  • Then, strain the broth.
  • Fry the rest of the vegetables cut into small cubes (or grated) in butter.
  • Sprinkle with flour, sauté, and pour over the broth.
  • Cook until the vegetables soften.
  • Towards the end, soften with cream and season with lemon juice, nutmeg, and parsley.

With its rich and flavorful broth, tender chunks of carp, and aromatic herbs and spices, this soup is a true delight for the senses.

Ingredients:

  • 18 oz of carp head and skeleton
  • 1 cup of root vegetables (carrots, celery, parsley) chopped to small cubes
  • small onion
  • 3 balls of whole black pepper
  • 3 balls of allspice
  • 2 bay leaves
  • salt
  • 2 liters of water

  • 1 1/2 cup of root vegetables
  • small onion
  • 1/4 cup of butter
  • 1/4 cup of all-purpose flour
  • fish broth
  • they are milking
  • 1 bunch of parsley
  • a pinch of nutmeg
  • pepper
  • salt

Method:

  • Wash the fish heads and remove the eyes.
  • Put them in a pot with the cleaned vegetables, cover with cold water, add spices and salt, and bring to a boil.
  • During cooking, we collect the foam. We cook for about two hours on a low flame.
  • In the meantime, cut the vegetables into cubes or grate them.
  • Strain the broth.
  • Put butter in a pot and fry the vegetables in the butter, then cover them with flour.
  • Then, pour in the broth and bring to a boil.
  • Clean the milk from the membranes and fat and add it to the soup.
  • Cook for another 10 minutes until softened.
  • Finally, garnish with chopped parsley and season with a pinch of nutmeg.

Ingredients:

  • 2 carp heads (skeleton, remains)
  • 5 bay leaves
  • ½ teaspoon whole black pepper
  • ½ teaspoon allspice
  • vinegar
  • 1 teaspoon of dried thyme
  • 1/2 cup of root vegetables chopped to small cubes
  • 1 onion
  • 2 tablespoons of butter
  • 1 tablespoon plain flour
  • salt
  • 10 cups of water

Method:

  • Put carp’s washed remains in a pot with spices, salt, vinegar and water and bring to a boil.
  • Meanwhile, grate the root vegetables on a grater.
  • After 25 minutes, strain the broth.

Ingredients:

  • 1/4 cup of butter
  • 1/2 cup of semolina
  • 1 parsley
  • ½ large celery
  • 3 carrots
  • 6 cups of broth (vegetable, meat)
  • 1 egg yolk
  • 1/2 cup of cream
  • salt
  • pepper
  • sprig of parsley for garnish

For dumplings:

  • 2 eggs
  • 1 small onion
  • butter
  • 1 teaspoon plain flour
  • breadcrumbs
  • ½ teaspoon marjoram
  • 1 clove of garlic

Method:

  • Grate the vegetables on a coarse grater.
  • Fry semolina in butter and add vegetables, taste.

  • Prepare the gnocchi by dicing an onion and frying half of it in butter. Add one egg as if you were making scrambled eggs.
  • Allow the mixture to cool slightly, then mix in the second egg, finely chop the remaining onion, and press garlic, flour, salt, pepper, and breadcrumbs to form dumplings from this consistency.
  • Boil the dumplings in boiling salted water until they float.
