Poppy Seed Cookies with Jam

Every dish should be pleasing to the eye, so take care and win a little with each type of candy.

Why make plain poppy circles when it can be a star, right?

Ingredients for Jelly Poppy Candy:

  • 1 cup of all-purpose flour
  • 1/2 cup of butter
  • 5 tbsp of sugar
  • 2 egg yolks
  • 2 – 3 spoons of ground poppy seeds
  • For filling: jam (as per your preference)
  • For the glaze: 1/2 cup of powdered sugar, 2 tablespoons of fresh lemon juice and 1 tablespoon of boiling water.

Preparation of the base:

  • Sift the flour and sugar into a bowl. Add ground poppy seeds, egg yolks, and softened butter, and mix with a wooden spoon.
  • Then, put the wooden spoon aside and work out a smooth dough with your hands. Shape it into a roll, wrap it in cling film, and leave it to rest in the fridge for at least 1 to 2 hours (you can make the dough the day before).
  • When the dough has rested enough, roll it out on a floured rolling pin (you don’t need flour if you have a silicone rolling pin and a rolling pin) to a 0.2 inches thick plate.
  • Use a mold to cut stars out of it. Leave half full, and always cut out the other half in the middle with a small circle so that the star is perforated.
  • Transfer the prepared stars to a tray you have previously lined with baking paper and place in an oven preheated to 300°F.
  • The baking time varies according to the oven, but it is enough if you make sure that the stars are baked until pink. Transfer the finished stars while still hot to a mat or tray and let them cool.

Preparation of the filling (optional – you can use simple jam for filling):

  • Put the jam in a small saucepan, cover it with cherry liquor, and cook it together briefly.
  • Immediately pour into a bowl and let the filling cool.

Preparing the lemon glaze :

  • Sift the icing sugar into a small bowl. Add the fresh lemon juice and boiling water and stir with a spoon, fork, or small wooden spoon (not greasy) until you have a white icing with a very fine and smooth consistency.
  • Finally, always spread marmalade on the full star, cover it with the cut-out star, and press lightly (be careful not to crack the candy).
  • Coat the glued stars with lemon glaze and let them dry thoroughly. Then, store them in the fridge and let them sit.

You can try using spicy jam with the cookies. You can also replace cherry liquor with dark rum. Try chocolate or egg yolk instead of lemon frosting. Also, get inspired by our article on frostings for Christmas cookies.
