  6. Break off small pieces of the dough, shape them into a ball in your palms, and then roll them between your palms into rolls.
  7. Then, bend them to form a roll shape.
  8. Place the coconut rolls on a baking sheet lined with baking paper.
  9. Preheat the oven to 350°F.

Soft Coconut cannolis with cream

You don’t always have to add coconut only to the dough; you can also use it in fillings. This typically English recipe is an example.

Ingredients:

  • 1 package of puff pastry
  • 2 cups of mascarpone or cottage cheese
  • 4 cups whipping cream
  • 1 cup powdered sugar
  • 1/4 cup finely shredded coconut
  • 1/2 teaspoon of vanilla extract

Method:

  1. Preheat the oven to 400°F.
  2. Roll out the puff pastry into a square shape.
  3. Cut the dough into strips about 1.2 inches wide using a pizza cutter or a knife.
  4. Wrap each strip around a puff pastry mold in the shape of a tube, hollow roll, or cone.
  5. Place them on a baking sheet lined with baking paper and bake in the oven for 15-18 minutes or until golden.
  6. The puff pastry is very tender. If you underbake it, the corners will unroll, but if you overbake it, they will be difficult to remove from the molds.
  7. Remove from the oven and carefully remove the hollow rolls from the molds.
  8. Leave to cool, and prepare the coconut cream in the meantime.
  9. Beat the mascarpone or cottage cheese until smooth and creamy.
  10. Add the powdered sugar and coconut, gradually increasing the mixer speed until well combined.
  11. Finally, add the whipping cream to the mixture, start whipping on low and gradually increase the speed.
  12. When you get a thick cream, it’s done.
  13. Subsequently, it is enough to fill the hollow rolls on both sides with the help of a decorating bag and put them in an airtight container in the refrigerator for at least 8 hours.

Coconut and Christmas baking

During the Christmas season, coconut plays a significant role in holiday baking.

Beyond the popular unbaked Rafaelo-style coconut balls and coconut macaroons, coconut is also an excellent ingredient for baking various rolls during this festive time of year.

When it comes to baking with coconut, the recipes for coconut rolls are quite straightforward. These recipes typically call for unsweetened finely grated coconut, but some variations incorporate coconut flour, providing a different texture and flavor profile.

Being mindful of the amount of coconut used in these recipes is crucial. While coconut brings a rich and intense flavor to the rolls, too much can lead to challenges working with the dough.

Therefore, it’s often best to exercise restraint and not go overboard with the coconut to ensure a delightful baking experience.
