What will you need for the cheesecake?

  • 1 1/2 cups of butter
  • 1 1/2 cups of all-purpose flour
  • 1 1/2 cups of cottage cheese
  • pinch of salt
  • 1 bag of vanilla sugar
  • 1 egg yolk
  • 1/2 teaspoon ground cinnamon (if you don’t like cinnamon, you can add lemon zest)
  • icing sugar and vanilla sugar for coating

Method:

  • Put the flour in a bowl, add chopped butter, egg yolk, cottage cheese (not in a tub but in a cube), salt, sprinkle vanilla sugar with cinnamon (lemon peel), and make a smooth dough.
  • Cover it with foil and rest in the fridge for 2 to 3 hours.
  • Then, roll the dough on a floured rolling pin to a 0.2-inch high sheet.
  • Cut out different shapes and stack them on the baking sheet (you can easily stack them close to each other because they will shrink during baking, but they will jump up).
  • Bake in an oven heated to 350°F for around 8 minutes.
  • While still hot, roll the baked cookies in a mixture of vanilla and powdered sugar.

Method:

  • Put the egg whites with a pinch of salt in a bowl and beat them until stiff peaks form.
  • The right consistency is such that when you turn the bowl upside down, the snow holds in it.
  • Put cottage cheese, flour, vanilla sugar, and coconut in another bowl and mix thoroughly.
  • Gradually start adding solid snow to the curd mixture, one spoon at a time, and mix only lightly and as carefully as possible.
  • Prepare a tray with baking paper. Use a spoon to form small piles on the tray, which we shape like coconuts.
  • Place in an oven preheated to 300°F and bake until pink. Allow the coconuts to cool after baking.

It is ideal to cool them in the fridge and then serve them with coffee or just for a bite, for example, after Christmas dinner.

Fitness Cottage Cheese Cookies

Although many people condemn the healthier versions of candy and other treats, this recipe is very successful.

In the final version, it is just as tasty as a classic white flour cookie. After all, judge for yourself!

Ingredients:

  • 1 1/2 cups of wholegrain rye flour
  • 1 egg yolk
  • 1 cup of butter
  • 1 1/2 cup of low-fat cottage cheese
  • pinch of salt
  • apricot jam for gluing
  • natural unsalted pistachios (for sprinkle)

Method:

  • Put the whole grain rye flour in a bowl, add a pinch of salt, chopped butter, cottage cheese, and egg yolk, and process everything into a smooth, non-sticky dough (if it is sticky, add a little flour).
  • Wrap the finished dough in cling film and let it rest in the fridge for 2 to 3 hours.
  • Anyone who wants to can easily make it one day and process it the next day.
  • Put the dough on a floured rolling pin and roll it into a 0.2-inch thick sheet. Cut out motifs like stars, trees, and the like, and put them on a baking sheet lined with baking paper.
  • Preheat the oven to 350°F and bake the cookies for about 15 to 20 minutes, depending on the oven.
  • It should be pink, but if you’re unsure about using a different flour, you can try sticking a skewer into one of the flowers.
  • After baking, let the cookies cool, and then use apricot marmalade to glue one cookie to the other.
  • Once done, sprinkle some chopped unsalted pistachios onto each cookie.
  • If you like, you can coat the flowers with chocolate glaze and then sprinkle with pistachios.
