Even vegans or celiacs can enjoy delicious cookies, which are also extremely easy to prepare! That’s exactly what these Gingerbread Energy Bites are. Balls made of almonds, oatmeal, hemp seeds, nut butter, dates, and gingerbread spice are super healthy and tasty.
What you will need
- 1 cup whole natural almonds
- 1 cup rolled oats
- 1/4 cup hemp seeds
- 5 spoons cane molasses
- 2 tablespoons almond or cashew butter
- 12 dates without seeds
- 1 teaspoon of vanilla
- 1 teaspoon of cinnamon
- 1 teaspoon of ground ginger
- 1/8 teaspoon cloves
- A pinch of sea salt
- 2-4 tablespoons of unsweetened almond milk
- ground and/or finely chopped almonds for coating
- hemp seeds for wrapping
Method
- Place the almonds and oatmeal in a food processor and blend until the mixture resembles very fine crumbs.
- Add hemp seeds, molasses, almond or cashew butter, dates, vanilla, cinnamon, ginger, cloves and sea salt.
- Process until the mixture is well combined, smooth, and sticks together, scraping down the sides with a rubber spatula halfway through.
- Add the almond milk one tablespoon at a time until the mixture sticks together and easily rolls into a ball. You may not need all of the milk.
- Roll 2 teaspoons of the mixture into a ball using the palms of your hands and roll each ball in either the ground almonds, chopped almonds, or the hemp seeds.
- Set aside and repeat with the remaining mixture.
- Store in a covered container in the refrigerator for 1 week or freezer for up to 2 months.

Christmas Gingerbread Spritz Chocolate Balls
Chocolate lovers will enjoy these unbaked white chocolate balls covered in dark chocolate. Cinnamon, ginger, and cloves give them a wonderful gingerbread taste, and candied ginger gives it a final twist.
What you will need
- 1 1/2 white cooking chocolate, chopped
- 1/2 cup heavy whipping cream
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1 cup dark chocolate chips
- 5 teaspoons vegetable fat
- 3 tablespoons of chopped candied ginger
Method
- Place the chopped white chocolate in a small bowl.
- In a small saucepan, bring the whipping cream to a boil.
- Pour the hot cream over the white chocolate and beat until smooth.
- Stir in the cinnamon, ginger, and cloves.
- Cool to room temperature, stirring occasionally.
- Cover and refrigerate until set, about 3 hours.
- Shape mixture into 3/4-inch balls.
- Place the balls on baking sheets lined with baking paper.
- Refrigerate for at least 1 hour.
- Mix the chocolate chips with the vegetable fat in the microwave until smooth.
- Dip the balls in melted dark chocolate and let the excess drip off.
- Place the balls in chocolate on baking paper.
- Sprinkle with candied ginger.
- Store in an airtight container in the refrigerator.
Christmas Coconut Gingerbread Balls
You will love this Christmas cookie! The combination of gingerbread, marmalade, chocolate, and eggnog is incredibly addictive and will become your holiday tradition.
Ingredients
For the dough:
- 2 eggs
- 1 cup milk
- 1/2 cup butter
- 1 1/7 cane sugar
- 1 spoon of honey
- 1 spoon of cocoa
- 1 teaspoon of cinnamon
- 1 tablespoon of plum jam
- 1 1/2 all-purpose flour
- 1 teaspoon of baking soda
- 2 teaspoons of gingerbread spice
For balls:
- 7 oz eggnog
- 4 spoons of plum jam
- 1/2 cup chocolate
- 1/2 whipping cream
- grated coconut for coating
Method
- Put the butter, sugar, and honey in a saucepan.
- Allow the mixture to dissolve, and add the plum jam.
- Beat the eggs in a bowl with a fork, add the milk and mix.
- Add melted butter, sugar, and honey in a bowl with eggs and milk.
- Finally, mix in all the pre-mixed loose ingredients for the dough.
- Pour the finished dough onto a greased baking sheet.
- Bake in a preheated oven at 350°F for about 35 minutes.
- Remove the baked dough from the oven.
- Let the dough cool and cut it into small pieces.
- Transfer the pieces to a larger bowl.
- Melt the chocolate in the hot whipping cream.
- Gradually add the plum jam, eggnog, and melted chocolate with cream to the bowl with the dough pieces.
- Knead the resulting mass thoroughly with your hands and shape it into balls, which you wrap in coconut.

Gingerbread Truffles
Savor every bite of these divine dark chocolate and gingerbread spiced truffles wrapped in crushed ginger cookies and topped with vanilla frosting. Yum!
Ingredients
- 2 teaspoons ground allspice
- 2 teaspoons ground cinnamon
- 2 teaspoons ground ginger
- 1 teaspoon ground cloves
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground black pepper
- ¼ teaspoon salt
- 16 oz 35 – 65% dark chocolate, chopped
- 1 cup whipping cream
- 1 1/2 cup finely crushed ginger biscuits/gingersnaps
- 1 cup powdered sugar
- 1 tablespoon (or more) whole milk
- 1/4 teaspoon vanilla extract
Method
- Combine allspice, cinnamon, ginger, cloves, nutmeg, pepper, and salt in a medium bowl.
- Add the chopped chocolate on top of the spice mixture.
- Heat the cream in a small saucepan over low heat (do not let it boil).
- Pour the hot cream over the chocolate and spices.
- Let sit for 5 minutes and then blend until smooth.
- Pour the mixture into an 8″-by-8″ baking pan and smooth it into an even layer.
- Press plastic wrap over the surface of the chocolate mixture and refrigerate until firm, about 1 hour.
- Place the crushed gingersnaps in a small bowl.
- Line the tray with baking paper.
- Shape the chocolate mixture into balls and wrap them in crushed ginger biscuits.
- Roll the balls again more in crushed biscuits and transfer them to the prepared tray.
- In a small bowl, combine the powdered sugar, milk, and vanilla, adding more milk one teaspoon at a time, if needed, until the mixture is a frosting.
- Transfer the frosting to a pastry bag fitted with a 1/4″- diameter tip (or use a plastic bag with the corner cut off).
- Arrange the balls on a plate and decorate with the glaze.

Swedish No Bake Gingerbread Balls

What you will need
- 1 cup almond paste
- 1 cup butter
- 3 cups oatmeal
- ½ spoon ground ginger

- 1 tablespoon orange juice
- pearl sugar
Method
- Heat up the butter so it is soft but not melted.
- Grate the almond paste.

- Take a plate and pour pearl sugar on it
- Start rolling small dough balls and then cover them in pearl sugar.

Christmas Gingerbread spiced Low-carb Truffles
You don’t have to starve at Christmas, even on a low-carb diet. We have a luxurious recipe for unbaked balls made of mascarpone, coconut, almond butter, and gingerbread spices, which are filled with roasted almonds and covered in dark chocolate. A delicacy!
What you will need
- 1 cup mascarpone
- 5 tablespoons of grated coconut
- 2 tablespoons of almond butter
- 2-3 teaspoons of sugar-free gingerbread spice
- 1 teaspoon of grated orange peel
- 12-15 almonds
- xylitol or erythritol to taste (optional)
- 50 g dark chocolate (min. 85%)
- 1 teaspoon of coconut oil
Method
- Place the almonds on a tray lined with baking paper and bake in an oven preheated to 350°F for approx. For 5-8 minutes, you can also dry them in a pan.
- Leave to cool.
- Mix the coconut, mascarpone, almond butter, gingerbread spice, orange peel, and, if necessary, sweetener.
- Form the mixture into small balls.
- Place a toasted almond inside each ball.
- Put the balls in the fridge for at least 20 minutes to harden.
- Melt the dark chocolate together with the coconut oil.
- Wrap the hardened balls in chocolate and decorate as you wish.
- Put in the fridge for 30 minutes.
- Enjoy your meal!
