Ingredients
- 1 cup lukewarm water
- 1/4 cup lukewarm milk
- 2 and 1/4 teaspoons yeast (powder)
- 2 spoons of granulated sugar
- 1/4 cup unsalted butter
- 1 and 1/2 teaspoons salt
- 3 1/3 cups all-purpose flour or bread flour
Method
- Mix the warm water, milk, yeast, and sugar in a bowl.
- Cover and let stand for 5 minutes.
- Add butter, salt, and 1 cup flour.
- Knead until everything is relatively combined.
- Add the remaining flour and continue to combine either in a bowl or on a lightly floured surface.
- Lightly grease a large bowl with olive oil.
- Place the dough in the bowl and turn to coat all sides.
- Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel and leave to rise in a relatively warm environment for 1-2 hours.
- Grease the bread pan with butter.
- When the dough is risen, you work it to release the air.
- Place the loaf in the prepared pan.
- Cover the loaf and let it rise again for 1 more hour.
- Preheat the oven to 350°F and bake for 30-34 minutes until golden brown.
- Cover the pan loosely with aluminum foil if the top is browning too quickly.
- Remove the loaf from the oven and let it cool for a few minutes before slicing.

- 1 ¼ cup milk (feel free to use unsweetened almond milk)
- 1/3 cup old-fashioned rolled oats
- 1 tablespoon honey
- 2 1/4 teaspoons quick-rise yeast
- 3 tablespoons melted butter
- 2 cups bread flour
- 3/4 cup whole wheat flour, plus more if necessary
- 2 tablespoons flaxseed
- 1 teaspoon salt
- 2 tablespoons sunflower seeds
- 1 tablespoon sesame seeds
- 1 spoon poppy seeds
For sprinkling
- 1 tablespoon sunflower seeds
- poppy seeds and sesame seeds (optional)
Method
- Heat the milk in a small saucepan, then stir in the flakes, yeast, and honey. Let the mixture rise for about 5 minutes.
- Then, add the melted butter into the same bowl.
- Immediately add plain flour, wholemeal flour, flaxseed, and salt and mix.
- Add sunflower, sesame, and poppy seeds, mix gently, and stir into the dough.
- Place the dough on a well-floured surface and knead the dough with your hands for 10 minutes.
- After kneading, shape the dough into a ball, place it in a large bowl smeared with about 1 tablespoon of oil, and coat the dough in the oil.
- Cover and let the dough rise for about 90 minutes.
- Then, grease the bread pan with fat.
- After the dough has risen, knead it for about 1 minute more and place it in the prepared mold.
- Cover it and let it rise again for 60-90 minutes.
- Preheat the oven to 350°F..
- In a small bowl, beat the eggs and brush the surface of the homemade lids. Sprinkle a few more seeds on top of the dough.
- Bake for 35-40 minutes or until the loaf is lightly golden brown on top, and the loaf sounds hollow when tapped.
- After baking, let the bread cool in the tin for 10 minutes, then tip out and cool for at least 2 hours before slicing.

- 4 cups whole wheat flour
- 3 spoons honey or sugar
- 2 teaspoons active dry yeast

- 1 cup hot water
- 1/4 cup warm milk

Method
- Place the flour, sugar, yeast, and salt in a bowl and mix until combined.
- Add the milk and whisk constantly. The mixture will be crumbly initially, but it will come together once you add all the milk.
- Add the butter and beat until thoroughly combined.
- Beat in the eggs one at a time.
- Place the dough in an oiled bowl and rise for 1 hour.
- Towards the end of the rising time, preheat the oven to 350°F.
- Bake for 38 to 42 minutes until golden brown.
- Remove from the oven, tip out of the tin, and leave to cool on a wire rack.
How to bake the best sandwich crust?
First, make sure your bread is done.
Experienced bakers can tell by tapping the loaf. An easier way is to measure the lid’s temperature in the loaf’s center. A loaf of plain flour is considered fully baked when you measure the temperature between 180°F and 190°F.
Lids baked with whole wheat flour should reach a temperature of 199°F to 205°F.
Do not remove the lid from the mold too soon.
Hands off, at least until it cools down a bit. Let it stand in the mold with a lid on for 5-10 minutes. After a longer time, the sides and bottom crust will toast, making it burnt rather than crispy.
Do not cut the bread when it is hot.
Cutting hot bread will evaporate much of the moisture from the loaf. In addition, when slicing bread, you will naturally apply a little pressure, both with your hand and with a knife, so it will always be more fluffy than it should be.
