  • 2 cups milk
  • 1 cup of eggnog
  • 6 egg yolks
  • 3/4 cup sugar
  • 1/4 cup potato starch
  • 1/4 cup wheat flour
  • 1 1/2 cup butter

Method

Dough

  • Preheat the oven to 210°F.
  • Pour the flour onto the cutting board and add the cold butter cut into cubes. Mix until the ingredients are combined.
  • Firstly, you need to crumble the yeast between your fingers and then add it to the mixture on the cutting board with a bit of flour. Next, make a hole in the flour and pour the cream, egg yolks, and honey.
  • Using a knife, chop the mixture until the ingredients are combined and the dough is smooth. As you approach the end, you may want to use your hands to knead the dough into a soft texture.
  • Divide the dough into several parts and roll each part out into a thin plate. Keep in mind that the dough will rise during baking. Once rolled out, cut thin strips from each plate. If the dough is sticky, dust it with additional flour to prevent it from sticking.
  • Grease the tube molds and roll out strips of dough on them, starting from the thinner end. Carefully press the dough to the edges of the mold so that it does not protrude during baking.
  • Then, using a pastry brush, brush the dough with a bit of beaten egg white and dip it in sugar.
  • On a tray lined with baking paper, place the finished tubes at a sufficient distance from each other and bake in a preheated oven at 350°F until they turn brown.
  • After baking, press the still-hot cannoli out of the molds – start with the thinner end. After baking, the tubes will be soft – they will harden as they rest.

Cream

  • Pour 1 cup of milk into a saucepan. Bring the milk to a boil, turn off the heat, and add the eggnog. Mix everything well.
  • Meanwhile, mix the egg yolks with the sugar into a light and fluffy egg mixture. Add the rest of the milk and the wheat and potato flour. Mix until everything is combined.
  • Pour the eggs into the milk with egg cognac and mix. Put the pot back on the gas. Boil for 1 minute from the moment of boiling. The mixture will thicken significantly. Stir often.
  • Set the custard mixture aside and cover it with cling film so that it touches the top of the custard – you won’t get sheepskin. Chill the egg pudding.
  • Beat the soft butter until white with a mixer. Then add, in thirds, the cooled custard and mix continuously. It would be best if you got a creamy mixture with no lumps.
  • Put the egg cream in a syringe with a filling tip and fill the tubes with it. Store the cannoli in the refrigerator.
  • Enjoy your meal!

Dough

  • 2 1/2 cup flour
  • 2 cups powdered sugar
  • 3 tablespoons of liquid honey
  • 1/4 teaspoon of baking soda
  • 3 egg yolks
  • 1 cup room-temperature butter

Filling

  • 2 1/2 cup granulated sugar
  • 1 1/2 cup cream cheese
  • 2 cups whole milk
  • 1 tablespoon of vanilla pudding
  • 1 tablespoon of vanilla sugar
  • 2 cups butter
  • 1 1/2 cup dark chocolate frosting

Method

Dough

  • Make a smooth dough from all the ingredients into a cannoli, wrap it in cling film, and leave it in the fridge for about an hour.
  • Then, roll the dough into a thin sheet and cut out circles with a diameter of 2.5 inches. Grease a piping bag with butter and roll the cut circles in it.
  • Bake until golden at 350°F.
  • When the cannoli shells are golden, remove them from the oven, as they may dry out too much and fall apart later.

Filling

  • Caramelize the sugar, cover with cream cheese, and mix until the caramel melts.
  • Set the mixture aside, stir occasionally, and wait until the caramel thickens.
  • Add custard and vanilla sugar to the milk, boil, and let cool.

  • 3 tablespoons of liquid honey

Cream

  • 2 cups mascarpone (well chilled)
  • 3/4 cup Nutella
  • 1 cup whipped cream (well chilled)
  • 2 tablespoons cocoa
  • 1/2 cup powdered sugar

Sprinkle

  • 1/2 cup chocolate
  • 1/2 cup hazelnuts

Dough

  • Put the flour, sugar, salt, cubed butter and cream in a mixer. Mix until the dough is on the border between wet sand and a homogeneous dough that can be shaped. Transfer it to a bowl, add honey and knead it very quickly and shape it into a ball. Wrap it in cling film and put it in the fridge for 60 minutes.
  • Preheat the oven to 390°F, line a tray with baking paper. Grease the cannoli molds with butter.
  • On a floured surface, roll out the dough (about 0.05 inch thick) and cut it into long strips 0.5 inches wide.
  • Roll the dough into the molds at a slight angle so that they overlap. Place the rolled-out tubes on the prepared tray and brush them with the beaten egg yolk and milk.
  • Bake the tubes for 15-20 minutes until golden.
  • After removing from the oven, let them rest for 15 minutes before removing. Leave the baked tubes to cool on a wire rack.

Sprinkle

  • While the cannoli shells are cooling, prepare the sprinkles.
  • Chop the nuts and set aside on a plate.
  • Melt the chocolate in a water bath.
  • Once the tubes have cooled, you can start dipping their ends in chocolate and wrapping them in nuts.
  • Before the chocolate hardens on the edges (you can put the tubes in the fridge for 15 minutes), prepare the cream.

Cream

  • Place the mascarpone cheese and Nutella in a bowl and mix thoroughly and gently with a spatula (not a mixer).
  • Mix the sifted cocoa and powdered sugar in a bowl, add the cream and mix. Beat everything with a mixer with a whisk attachment for one minute until a thick, slightly fluffy cream is formed.
  • Carefully fold the whipped cream into the mascarpone and Nutella with a spatula.

Cream

  • 1 egg
  • 2 spoons of sugar
  • 1 spoon of sugar with vanilla
  • 3/4 cup butter
  • 1/2 cup caramelized sunflower seeds
  • 1/2 cup dark chocolate
  • lemon juice

Method

Dough

  • Mix the flour with granulated sugar and baking soda, and cut the butter. Add liquid honey, eggs, and cream and make a dough.
  • Then, roll out the dough and cut into 0.7-inch long strips.
  • Wrap each strip of dough in a tube, cover with cane sugar, place on a baking sheet, and place in a preheated oven. Bake for about 15 minutes at 356°F.

Cream

  • Boil the eggs with sugar and vanilla sugar until white. Then remove from steam and whisk until cool.
  • Beat the butter into a fluffy foam, and gradually, spoonful, add the egg mixture. Add lemon juice to taste.
  • Divide the mixture into 2 parts, leave one light, and add sunflower seeds and half of the chocolate, melted in a water bath, to the other.
  • Put the mixture separately in pastry sleeves and fill the cooled tubes.
