- 2 cups semi-fat cottage cheese
- 1 egg

- 1/2 cup honey
- 1/2 cup granulated sugar
- 1/2 cup butter
- 1/2 cup roasted peanuts
- 1/2 cup roasted pistachios
Method
- Preheat the oven to 350°F.
- Mix the flour, sugar, ginger, and cold butter.
- Place the prepared dough on a lightly floured rolling pin and roll out to 0.2 inches.
- Make 24 rounds with a cookie cutter and carefully press mini muffin tins or cupcakes.
- Put in the fridge.
- For the filling, mix the melted and cooled butter, sugar, and cottage cheese. Mix until everything is combined.
- Cool, then add the eggs.
- Divide the mixture into cupcakes and bake for 20 minutes.
- Leave to cool before removing from the tins.
- To make the caramel nuts, place the honey, sugar, and butter in a small saucepan.
- Melt slowly and then bring to a boil, stirring, until it turns a light caramel color.
- Remove from the heat and stir in the nuts.
- Put one teaspoon of nuts in caramel on each cupcake and let it harden.

- 2 cups butter
- 1 package of cream cheese
- 2 1/2 cups all-purpose flour
- 1 cup powdered sugar (or 1/2 cup¨granulated sugar)

- 3 large eggs
Method
- Mix the butter, cream cheese and cake flour together.
- Press the resulting dough into muffin tins or cups.
- Beat eggs, and gradually add sugar.
- Add the melted butter and vanilla.
- Add the nuts and mix well.
- Fill the cups ½ to ¾ with the nut filling.
- Bake at 350°F for about 20 minutes until they are light brown.
- Sprinkle with powdered sugar before serving.

Method
- In a food processor, add flour, sugar, salt and butter.
- Work the butter into the flour until crumbly.
- Add the eggs and mix until the dough is homogeneous.
- Wrap the dough and refrigerate for at least 30 minutes.
- Preheat the oven to 350°F.
- Roll the dough into a rectangle and cut out small circles to fit into the cupcake tins.
- Prick the bottom of the cupcake with a fork.
- Bake for 20-25 minutes until lightly golden.
- Mix the egg yolks with the sugar.
- Heat the sugar until it turns golden brown. Immediately add the walnuts and butter and mix well.
- After the butter has melted, remove from the heat and stir in the yolk mixture.
- Return to the stove and stir constantly until thickened.
- Remove from the heat and continue to mix for a few minutes before filling the cupcakes.
- To make the chocolate frosting, melt the chocolate in a bain-marie, stir in the butter and 1 tablespoon heavy cream until well combined.
- Immediately pour over the caramel filling with nuts.

- 3 large eggs

Method
- Preheat the oven to 350°F.
- Roll out the puff pastry and cut circles out of it.

- Prick the bottom with a fork and let cool for 10 minutes.
- Line the molds with the dough with baking paper and fill them with weights or rice.

- Divide the macadamia nuts evenly between the cupcakes, then return to the oven and bake for about 25 minutes or until the cupcakes are golden.
- Allow the walnut cupcakes to cool for about 10 minutes, then dust them with powdered sugar.

- Put the walnut cupcakes in the fridge for 2-3 hours to harden the filling.
