Marzipan meringues
This recipe allows you to enjoy a wonderful combination of hazelnuts, marzipan, and ground almonds.
Ingredients
- 1 1/2 cup of marzipan
- 1/3 cup of powdered sugar
- 1 egg white
- 1/4 cup plain flour
- handful ground almonds
- handful of hazelnuts
- 2 tablespoons of cane sugar
- 2 tablespoons of whipping cream
- chocolate topping
- confectionery decoration
Method
- Prepare a pan and dry-fry the chopped hazelnuts in it. Add sugar to them and let them caramelize.
- Add cream and a little water (as needed) and make a smooth mixture. As soon as the mixture is formed, pour it onto a greased baking sheet and spread it over the entire surface.
- Wait for the mixture to harden, and then chop it into small pieces. Grate the marzipan into a bowl, add flour with icing sugar, ground almonds, egg white, and the chopped mixture with hazelnuts.
- Process all the ingredients into a smooth dough. Then, take equal-sized pieces and shape them into small balls.
- Place the balls on a tray lined with baking paper and place in an oven preheated to 360°C.
- Bake for 12-15 minutes. Leave the baked meringues to cool for a while, then cover them with chocolate glaze and add sugar decorations.
- Pearls, flowers, chocolate decorations, etc. are suitable. Then you just have to wait until the frosting hardens and you can consume it.

Cut-out marzipan Christmas cookies with chocolate

Ingredients
- 1/2 cup of butter
- 1 cup plain flour
- 1/4 cup of milk chocolate
- 1/4 cup dark chocolate
- 1 teaspoon cocoa (ideally Dutch type)
- 1/2 cup of marzipan mass
Method
- Sift plain flour with cocoa into a bowl, add grated chocolate (both types), marzipan, and softened butter, and process everything into a smooth dough.
- Wrap the dough in cling film and leave to rest in the fridge for 30-45 minutes.
- Line a tray with baking paper and preheat the oven to 350°F.
- Put the dough on a roll, roll out a sheet 0.1 inches thick, and then cut out the shapes you like (e.g., stars, bells, etc.).
- Transfer the cutout cookies to a baking sheet and bake for 25-30 minutes. You can leave the baked cookies as they are, or lightly sugar them, or cover them in chocolate coating.
- Another option is to glue the individual shapes together with jam.

In this recipe, marzipan is not part of the dough but only serves as a filling.

Ingredients
Dough:
- 2 cups of plain flour
- 1 cup of softened butter
- 1 cup of ground almonds
- 1 cup of maple syrup
- 2 whole eggs
- 1 bag of vanilla sugar
- 1 teaspoon of baking powder
- 1/4 teaspoon freshly grated lemon zest
Filling:
- 1 cup of marzipan
- 1/4 cup of powdered sugar
Decoration:
- chocolate topping
- confectionery decoration
Method
- Prepare a bowl and add the softened butter, maple syrup, vanilla sugar, and lemon zest. Beat everything together into a foam. Then, gradually beat the eggs into the mixture.
- Sift the flour and baking powder into another bowl. Mix the smaller half of this mixture into the prepared butter mixture. Add the ground almonds and stir well to combine.
- Add the remaining half of the flour with the baking powder in small portions and make a smooth dough. Wrap the dough in cling film and let it rest in the fridge for an hour.
- Place the cooled and rested dough on a rolling pin and roll out a thin sheet from which you will cut out individual pieces using a mold.
- Place the candy on a baking sheet lined with baking paper and bake in the oven, heated to 340°F, for 10 minutes.
- After baking, put the cookies on a flat surface and let them cool completely.
- Meanwhile, process the marzipan with 1 tablespoon of caster sugar to form a smooth mass. Use the rest of the icing sugar to dust the rolling pin on which you will roll out the marzipan.
- Cut out the same shapes from the marzipan sheet as you did from the dough you baked.
- Always glue two identical baked shapes with one marzipan shape that you insert between them.
- Finally, dip half of the cookies in the chocolate coating, sprinkle with decorations, and let set.

- Pour the prepared hot water and sugar into the bowl in small portions and divide the resulting mixture according to how much food coloring you have.
- Make a well in the center of each portion of the mixture and add about 4-5 drops of food coloring.
- Start kneading the dough. If an oily substance appears when kneading the dough, it is okay.
- Once the dough is ready, divide it into smaller balls and shape them using molds in the shape of shells, stars, etc.
- Let the unbaked marzipan Christmas cookies prepared in this way dry in the air for about 6-8 hours.
- Once the marzipan shells are dry, you can serve them or store them in an airtight container. Mussels stored this way will last for 2-3 weeks at room temperature and up to a month if you keep them in the refrigerator.

Linzer cookies with marzipan

Linzer cookies are a traditional Austrian pastry consisting of two buttery, nutty, or almond-flavored shortbread cookies sandwiched with a layer of jam. These delightful cookies are often dusted with powdered sugar and are known for their delicate texture and rich flavor.
