  • Let’s prepare the pistachio part of the dough first.
  • Blend the pistachios until smooth, add the dates and a pinch of salt, and blend again.
  • We form small balls and place them on a baking sheet lined with baking paper.
  • We will need melted chocolate to prepare the nougat part.
  • Mix this with nut butter, nut flour, and salt.
  • Let the dough cool in the fridge for 15 minutes.
  • In the meantime, make the marzipan by mixing dates, almond flour, vanilla and salt.

  • Then, add the rest of the marzipan ingredients and mix until it is smooth.
  • Then, knead the dough thoroughly and put it aside.
  • To prepare pistachio marzipan, we will need pistachios and almonds.
  • Put both in a blender and mix again for 3-5 minutes.
  • Then, add the rest of the ingredients for the preparation of pistachio marzipan, mix, knead, and set aside.
  • For the chocolate nougat, we will need roasted walnuts, which we will mix with permitted cocoa butter.
  • Then add the rest of the nougat ingredients, mix, knead, and set aside.
  • Now we can shape.
  • We make balls from the pistachio dough.
  • Wrap each ball with the nougat dough by making a slightly larger ball, flatten it, and wrap the pistachio ball in it.
  • We proceed in the same way with the next layer of marzipan.

  • 1/2 cup of whipping cream
  • 5 tbsp of butter

Method:

  • Dry-roast the hazelnuts in a pan, add cream after 3-5 minutes, and cook for about 10 minutes.
  • Then, strain the cream with the nuts and continue to cook the cream until it is reduced to about half.
  • Melt 150 g of dark and equally white chocolate, each separately, over a water bath. Then add cream and butter to each.
  • Put food foil in a 30×30 baking dish and pour the first white layer, then the dark layer.
  • Let it harden in the fridge overnight.
  • Finally, pour over the remaining melted dark chocolate.
