Real Mozart balls

INGREDIENTS
- 1 1/2 cups of ground almonds
- 1/2 cup of powdered sugar
- 1 egg
- 1 lemon
- 1/4 cup of ground pistachios
- 2 spoons of cocoa

METHOD
- Mix one cup of ground almonds, sugar, eggs, lemon juice, and zest in a bowl.
- Prepare the dough and divide it into 3 parts.
- Add pistachios to one-third, cocoa to the second, and the remaining almonds to the third.
- Mix each part of the dough.
- We make a small ball from the pistachio part of the dough, and from the cocoa part into a pancake, we wrap the pistachio ball and shape it.
- Finally, we shape the last layer in the same way.
- Cover everything in chocolate and let it harden.

Healthy Mozart Balls

INGREDIENTS
Pistachio:
- 3 tbsp of pistachios
- 4 tbsp of dates
- pinch of salt
Nougat:
- 4 tbsp of melted chocolate
- 4 tbsp of walnut butter or other
- 2 tbsp of walnut flour or almond flour
- pinch of salt
Marzipan:
- 1/2 cups of dates
- 4 tbsp of almond flour
- pinch of salt
- ½ teaspoon of vanilla
To finish:
- chocolate topping
METHOD
- Let’s prepare the pistachio part of the dough first.
- Blend the pistachios until smooth, add the dates and a pinch of salt, and blend again.
- We form small balls and place them on a baking sheet lined with baking paper.
- We will need melted chocolate to prepare the nougat part.
- Mix this with nut butter, nut flour, and salt.
- Let the dough cool in the fridge for 15 minutes.
- In the meantime, make the marzipan by mixing dates, almond flour, vanilla and salt.
- Divide the dough into 10 equal balls and put it in the fridge for a while.
- We take out the nougat and divide it into 10 balls, which we make into pancakes.
- We wrap the pistachio balls in the pancakes and shape them.
- Then, take out the marzipan and repeat this procedure.
- Finally, dip the balls in chocolate and let them harden.

Mozart balls with walnuts
This version of the recipe is also healthier. Above all, it does not contain refined sugars.
INGREDIENTS
Marzipan:
- 1/2 cup almond slices (or whole almonds)
- 3 tablespoons of agave syrup
- 10 drops of almond extract
- pinch of salt
Pistachio Marzipan:
- 4 tablespoons almond slices (or whole almonds)
- 1/2 cup of pistachios
- 3 tablespoons of agave syrup
- ½ teaspoon of lemon juice
- pinch of salt
Chocolate Nougat:
- 1/2 cup of walnuts
- 3 tbsp of cocoa butter
- 5 teaspoons of agave syrup
- 2 spoons of cocoa

METHOD
- Roast the walnuts in an oven heated to 340°F for 15 minutes.
- In the meantime, blend the almonds almost to butter (the fat will start to release).
- Then, add the rest of the marzipan ingredients and mix until it is smooth.
- Then, knead the dough thoroughly and put it aside.
- To prepare pistachio marzipan, we will need pistachios and almonds.
- Put both in a blender and mix again for 3-5 minutes.
- Then, add the rest of the ingredients for the preparation of pistachio marzipan, mix, knead, and set aside.
- For the chocolate nougat, we will need roasted walnuts, which we will mix with permitted cocoa butter.
- Then add the rest of the nougat ingredients, mix, knead, and set aside.
- Now we can shape.
- We make balls from the pistachio dough.
- Wrap each ball with the nougat dough by making a slightly larger ball, flatten it, and wrap the pistachio ball in it.
- We proceed in the same way with the next layer of marzipan.
- Finally, we dip into the chocolate coating made from cocoa butter and chocolate over a water bath.
Simple homemade Mozartkugeln
This option is absolutely simple. We can get closer to the taste by combining semi-finished products.
INGREDIENTS
- 1 cup of marzipan
- 1/2 cup of soft nougat chocolate
- 5 tbsp of pistachios
- 1/2 cup of dark chocolate
METHOD:
- Cut the chocolate into small cubes.
- Mix the pistachios, add the chocolate, and mix briefly.
- We make balls from the dough and cover everything with marzipan.
- Finally, dip in melted chocolate and let it harden.
Homemade Marzipan
You can also playfully create a recipe for Mozart’s candies from homemade marzipan. A variation can be pistachio marzipan.
Ingredients:
- 1 1/2 cup of powdered sugar
- 1 1/2 cup of almonds or pistachios
- 1 large egg white
Method:
- If we have unpeeled almonds, we put them in boiling water for a while; then they are easy to peel.
- Then we mix them until smooth.
- Add sugar and whipped egg white.
- We work it out, put it in food foil, and let it cool.

Nougat candies or nougat can be bought, or it can be created at home. Here is a simple recipe.
Ingredients:
- 1/2 cup of white chocolate
- 1 cup of dark chocolate
- 1/3 cup of ground hazelnuts
- 1/3 cup of sugar
- 1/2 cup of whipping cream
- 5 tbsp of butter
Method:
- Dry-roast the hazelnuts in a pan, add cream after 3-5 minutes, and cook for about 10 minutes.
- Then, strain the cream with the nuts and continue to cook the cream until it is reduced to about half.
- Melt 150 g of dark and equally white chocolate, each separately, over a water bath. Then add cream and butter to each.
- Put food foil in a 30×30 baking dish and pour the first white layer, then the dark layer.
- Let it harden in the fridge overnight.
- Finally, pour over the remaining melted dark chocolate.
Christmas Mozart balls
This is a marzipan version of the recipe for Mozart balls with nougat. For variation, almond marzipan can be replaced with pistachio marzipan.
INGREDIENTS
- 1 cup of marzipan
- 1 teaspoon of cognac
- 3 tbsp of nougat
To finish:

- Add cognac to the marzipan and knead.
- Then, divide the marzipan into 15 equal balls, which we flatten.
- Divide also the nougat into 15 pieces.
- We then wrap each piece in marzipan and shape it into a ball.
