- 17.5 oz golden potatoes, peeled and diced
- handful blanched almonds (or shelled walnuts)
- 3 to 6 cloves of garlic
- ¼ cup plus 2 tablespoons fresh lemon juice
- ¾ cup Greek extra virgin olive oil
- 1 green onion, trimmed and thinly sliced, for garnish
- fresh chopped parsley, for garnish
- zest of 1 lemon for garnish
Method
- Boil the peeled potatoes, cut them into cubes, and drain the water using a colander. Rinse the potatoes with cold water.
- Put the cooled potatoes back into the pot and add water so that the potatoes are covered by at least two centimeters. Salt the water generously.
- Bring to a boil over high heat, then reduce the heat to medium-low and cook for about 10 to 15 minutes or until the potatoes are well cooked.
- Drain the potatoes again and rinse them, this time with hot water. Wash for 30 seconds. Let the potatoes sit for 5 to 7 minutes to allow excess moisture to evaporate.
- While the potatoes are cooling, combine the almonds, garlic, a large pinch of salt, and lemon juice in the small bowl of a food processor fitted with the blade.
- Process until the garlic and almonds are reduced to a paste (as smooth as possible).
- Mash the potatoes. Using a potato masher or a grinder (do not use a food processor), mash the potatoes thoroughly.
- Mix mashed potatoes with extra virgin olive oil and garlic-almond paste. Add about ½ olive oil, a little at a time, to the mashed potatoes and mix well with a wooden spoon.
- Add the garlic and almond paste and mix well. Then add the remaining olive oil, again gradually, and mix well with a wooden spoon.
- Taste and add more salt if needed. Mix well to combine.
- If you will not serve the spread immediately, put it in the fridge and let it cool.

Method
- Preheat the oven to 356°F.
- Peel the carrots and sweet potatoes. Cut them in half and then into thin slices. The lighter the pieces, the faster they will cook.
- Bake for 25 minutes.
- Mix the vegetables with oil, spices, and a little water. Use a high-powered blender or a hand mixer.
- Transfer to clean jars and close the lids.
- You can serve the finished spread with fresh bread, but it also tastes great with toast, for example.

Ingredients
- 4 large pasteurized eggs
- 2 servings of instant mashed potatoes prepared according to the instructions on the package
- salt and freshly ground pepper
- 1 tablespoon of butter

Method
- Prepare the instant mashed potatoes according to the instructions on the package and let them cool slightly.
- In a lidded pot large enough to hold 4 glasses, bring enough water to a boil to come about 2/3 up the sides of the glasses.
- Meanwhile, prepare the bread slices by melting about 2 tablespoons of butter in a large skillet over medium heat. Add the bread slices and fry them in butter until golden.
- Add one tablespoon of butter to the pan and turn the slices of bread to brown the other side as well. Turn off the heat under the pan and let it sit until the eggs are done.
- Divide the eggs into four mason jars, filling about ⅔ full.
- Put a small piece of butter on the potatoes and use a spoon to make a small hole. Crack the egg on top so that the yolk is in the center of the well.
- Carefully place the jars into the boiling water, then immediately reduce the heat to medium-low and cover the pot with a lid. Cook gently for 5 to 5 1/2 minutes or until egg whites are set.
- Carefully remove the glasses from the water. Season them with salt and pepper and sprinkle with chopped fresh chives. Serve immediately with slices of butter and toast.
