Ingredients

Canapés

  • 12 slices white or whole wheat toast (thinly sliced)
  • olive oil

Spread

  • 3 tablespoons minced red onion
  • 1 tablespoon minced fresh dill, or more to taste, plus additional dill sprigs for garnish

  • 4ounces smoked salmon
  • 2 – 3 teaspoons fresh lemon juice

Method

  • Preheat the oven to 450°F. (This is only to toast the bread; you can use a toaster oven instead if desired.)
  • Remove the crusts from the toasted bread.
  • Roll out each slice of bread as thin as possible using a rolling pin.
  • Using a round cookie cutter, cut out 2 circles from each slice.
  • Brush the bread rolls with olive oil or spray each side with olive oil.
  • Bake for 12-15 minutes.
  • Place the room-temperature cream cheese in a small bowl. Mash the cream cheese with a fork until it’s smooth.
  • To the bowl of cream cheese, add the minced dill and two tablespoons of minced red onion (reserving the remaining tablespoon of red onion for garnish). Add 2 teaspoons lemon juice. Use the fork to mash the ingredients together until evenly combined.
  • Spread the cream cheese on the toasted bread. Garnish each canapé with a few pieces of minced red onion and a small sprig of dill. For best results, serve immediately.
