Method:
- Combine the flour, salt, cubed butter, icing sugar, nuts, and vanilla seeds in a food processor fitted with the paddle attachment.
- Mix on medium speed until a crumbly dough forms.
- Add 1-2 tablespoons of milk if the dough is too crumbly.
- Shape the dough into a ball, wrap it in cling film, and refrigerate it for an hour.
- Preheat the oven to 338°F and line the trays with baking paper.
- Roll out the cooled dough into a cylinder about 0.6-0.8 inches
- Cut the roll into approximately 3.2-inch pieces and shape them into a roll or crescent shape.
- Bake the vanilla rolls for approximately 12-15 minutes until the edges are golden.

Ingredients:
- 2 cups plain flour
- 1 cup cold butter
- 3/4 cup ground almonds
- 1/3 cup sugar
- 1 egg yolk
- 1 teaspoon of vanilla extract

Method:
- Cut the cold butter into small pieces.
- Combine the flour, butter, ground almonds, sugar, vanilla extract, and egg yolk in a medium bowl.
- Work into a homogeneous dough with your hands and shape it into a ball.

- Bake until golden, depending on the size of the rolls, approximately 12-15 minutes.

- Preheat the oven to 320°F.
- In a bowl, mix and thoroughly incorporate all the listed ingredients by hand or using a food processor.
- Shape the dough into a ball, wrap it in cling film and refrigerate overnight.
- Remove the dough and divide it into four equal parts the next day.
- From each part, roll out one long roll approximately 0.4-0.8 inches thick.

Most often, vanilla rolls are, of course, coated in sugar. But why not try this interesting variant with chocolate and coconut?
Ingredients:
- 2 cups plain flour
- 2 cups ground almonds
- 1 and 1/4 cup softened butter
- 2/3 cup sugar
- 1/2 cup Dutch cocoa or baking cocoa
- 1 and 1/2 teaspoons of vanilla extract
- 1/8 teaspoon salt
For decoration
- chocolate frosting or melted dark chocolate
- 1-2 tablespoons of powdered sugar
- 3-4 tablespoons of grated coconut
Method:
- In a bowl, beat the butter with the sugar until light and fluffy.
- Stir in the almonds and vanilla.
- In another bowl, mix the sifted flour, cocoa, and salt.
- Gradually mix the flour mixture into the cream mixture.
- Knead into a dough, wrap in cling film, and refrigerate for at least 2 hours.
- Preheat the oven to 350°F.
- Gradually shape the dough into 0.8-inch long rolls, which you then bend into a half-moon shape.
- Place them on baking sheets lined with paper and bake for 10-12 minutes.
- Remove the finished vanilla rolls from the oven and let them cool completely.
- Then, dip the rolls halfway into the chocolate coating or melted chocolate.
- Let the excess chocolate drip off.
- Place the cookies on baking paper and sprinkle with coconut.
- Let it harden.
- Finally, cover the ends of the rolls with chocolate and coconut and bake them on baking paper. Sprinkle the other part with powdered sugar.
The tradition of baking vanilla rolls
Vanilla rolls have been among the most popular and frequently baked candy types for decades, especially in Europe. But you may not know that their history dates back to the second half of the 17th century, and their origin is related to the victory of the Austrian Empire over the Ottoman Empire in 1683. Originally, they were not Christmas pastries but “celebratory” cookies for coffee or tea.
The shape of the roll was derived from the symbol of the Ottoman Empire – the crescent moon. The first recipes for vanilla rolls contained only flour, ground almonds, butter, vanilla, and sugar. Vanilla rolls soon became popular in all parts of the Habsburg Empire.
Various local adaptations of the original recipe were also made. For example, walnuts were often used instead of almonds. Variants enriched with egg yolks, which make the dough easier to work with, are also available.
