Easy Christmas Pecan Balls (Snowballs)

It is an incredibly simple Christmas cookie that the whole family will enjoy. Toasted pecans give it a whole new dimension!

Ingredients

  • 1 cup plain flour
  • 1 stick butter (1/2 cup/4 ounces), softened
  • 1 cup finely chopped toasted pecans
  • 3 spoons of granulated sugar
  • 1 teaspoon of vanilla extract
  • 1 cup powdered sugar

Method

  • To Toast Nuts: Place on an ungreased baking pan and bake at 350° F for 8-10 minutes.
  • Keep an eye on it so they don’t burn.
  • Cool, then chop.
  • Put all ingredients except powdered sugar into a large bowl.
  • Mix thoroughly by hand, cover with plastic wrap, and refrigerate for 30 minutes.
  • Preheat oven to 350° F. Roll cookies by hand into 1-inch balls.
  • Place on an ungreased or parchment-lined cookie sheet an inch apart.
  • Bake for 15 minutes or until set but not brown.
  • Let stand on a cookie sheet for about 2 minutes, then gently roll each one in powdered sugar.
  • Let cookies cool.
  • Once they cool (15-20 minutes), roll again (gently) in powdered sugar.
  • Store loosely covered.

Christmas Honey Balls

If you love honey slices, remember to prepare these simple Christmas balls made of honey, caramel condensed milk, and walnuts this year. They are delicious!

Ingredients

For 2 smaller honey sheets:

  • 1/4 cup unsalted butter
  • 1/4 cup powdered sugar
  • 1 large egg
  • 2 spoons of honey
  • 1 1/2 cups all-purpose flour
  • ½ teaspoon of baking soda
  • 1 tablespoon of milk

Other ingredients:

  • 1 can of condensed caramel milk
  • 1/4 cup butter
  • 2 tablespoons of honey
  • 3 handfuls of finely ground walnuts
  • mixture of mixed nuts and mixed honey sheet for coating (take a small part from the mixed sheets)

Method

  • First, prepare the honey sheets.
  •  Heat butter, sugar, eggs, honey, and milk in a pot over steam, stirring constantly.
  • Separately, mix the flour and baking soda in a bowl and slowly stir the hot mixture into this loose mixture.
  •  The dough will be sticky, but you can work with it.
  • Preheat the oven to 180 degrees Celsius and divide the dough into two parts.
  • Roll out two parts of the dough between 2 pieces of baking paper on two baking sheets.
  • Place the dough in the oven individually and bake for about 8 minutes.
  • Allow to cool, and gently mix the sheets.
  • Put the mixed slices, condensed caramel milk, softened butter, honey, and mixed nuts in a bowl.
  • Make a firmer dough and refrigerate for 2 hours.
  • Take the hardened dough out of the fridge and shape it into balls, which you wrap in the mixture you prepared by mixing the mixed sheets and nuts.
  • It can last for several days in a closed container in the cold.

Chocolate Date Walnut Balls

You can enjoy these balls with dates, nuts, and chocolate during the holidays without regrets. They contain only simple ingredients and no refined sugars. Still, they are incredibly indulgent!

What you will need

For balls:

  • 1 cup pitted dates
  • 1/4 cup cocoa
  • 1/2 cup ground hazelnuts
  • 1/2 cup ground walnuts
  • 1 tablespoon of cold water
  • 1 teaspoon of vanilla extract

For decoration:

  • 1/4 cup ground walnuts and hazelnuts
  • 1/2 cup melted dark chocolate

Method

  • Soak the dates in water for 30 minutes.
  • Add all the ingredients to a food processor or blender and blend until you have a sticky mixture.
  • Scoop the mixture with a soup spoon and form balls.
  • Lightly wet your hands to prevent the dough from sticking to your hands.
  • Refrigerate while you melt the dark chocolate.
  • Put the ground hazelnuts and walnuts in a small bowl.
  • Roll each ball in the nut mixture and drizzle with dark chocolate.
  • Leave to cool for about an hour for a firmer texture and to harden the chocolate.
  • Enjoy it!

Old-Fashioned Peanut Butter Balls

Even peanut butter can be used to make delicious and simple cookies. This recipe is an example of that. Enjoy them on their own, decorate them with icing sugar, coconut, or sprinkles, or dip them in melted chocolate.

Ingredients

For balls:

  • ½ cup butter, room temperature
  • 2 cups creamy peanut butter
  • 2 teaspoons of vanilla extract
  • 4 cups powdered sugar, sifted
  • ¼ teaspoon salt

Optional for decoration:

  • icing sugar
  • shredded coconut
  • sprinkles
  • finely chopped walnuts
  • melted chocolate

Method

  • Line a large tray with baking paper.
  • In a stand mixer fitted with the paddle attachment or in a large bowl with an electric mixer on medium speed, mix the butter, peanut butter, and vanilla until thoroughly combined.
  • Turn the mixer down to low speed and gradually add the powdered sugar and salt, mixing until combined.
  • Set the mixer to medium and beat for about 2 minutes.
  • Scoop the dough onto a tablespoon and form a ball.
  • Use up all the batter.
  • Place the balls on the prepared tray and put them in the fridge for an hour.
  •  Quickly roll the cooled balls in your palms to smooth the outsides.
  • Roll the balls in grated coconut, powdered sugar, sprinkles, or finely chopped nuts.
  • You can also dip the balls in chocolate.

Christmas Balls in 4 variants: Cranberry, Pistachio, Coconut&Salted Caramel

This recipe is the absolute bomb! One basic dough and four luxurious flavors. Making Christmas cookies couldn’t be easier. In addition, it is healthy, gives energy, and looks beautiful.

Ingredients

For balls:

  • 1 1/2 cashew nuts (soaked for several hours in water)
  • 1 cup Medjool dates
  • 1/2 cup oatmeal
  • 1 tablespoon coconut oil
  • 1 tablespoon raw honey
  • a pinch of Himalayan pink salt

To taste:

  • 2 tablespoons dried cranberries, chopped
  • ½ organic orange zest, finely grated
  • 3 teaspoons of cranberry powder
  • a pinch of grated nutmeg
  • a pinch of ground cloves
  • ⅛ teaspoon ground cinnamon
  • 2 tablespoons pistachios, coarsely ground
  • 2 tablespoon grated coconut (+ 2 teaspoons for dipping)
  • 2 teaspoons of cocoa
  • ½ teaspoon maca powder
  • a pinch of Himalayan pink salt
  • 3 tablespoons quality chocolate with salted caramel flavor

Method

  • Wash and drain the nuts.
  • Place them with the other ingredients for the balls in a blender or food processor and blend until you have a smooth paste.
  • Divide the mixture into four bowls.
  • Add chopped dried cranberries and orange peel to a bowl.
  • Roll the mixture into balls and coat them in cranberry powder.
  • Stir the spices into the mixture in the other bowl.
  • Roll again into balls and cover them with ground pistachios.
  • Mix the desiccated coconut into the third bowl.
  • Roll out the balls and wrap them in more coconut.
  • Add cocoa and maca powder to the last bowl.
  • Shape into balls and cover with grated chocolate.
  • Store in a cool place and use within a week.
