Christmas stuffed nuts

If you don’t bake glued or, if you want, stuffed nuts during the Christmas holidays, then it’s not the real Christmas.

Glued nuts are a real godsend; once you’ve tasted them, you’ll never get enough.

We recommend baking several batches so you have something to serve on Christmas Day.

What will we need for glued nuts?

  • 1 1/2 cup all-purpose flour
  • 1/2 cup of powdered sugar
  • 1/2 cup ground walnuts
  • 1 1/2 cup of butter
  • 1 egg yolk
  • a pinch of ground cinnamon

Method:

  • Sift plain flour with powdered sugar into a bowl. Add ground walnuts, ground cinnamon, cubed butter, and egg yolk and make a smooth dough, which we leave to rest for 3 to 4 hours.
  • In the meantime, we will prepare the molds for when we will be. Take out the rested dough and press a piece of dough into each mold. Only a small one is enough because we have to squeeze the dough into the mold to fill the entire space, but at the same time, a hole is formed, which we will then fill with the filling after baking.
  • Since the butter dough can be easily turned out, wiping the molds is unnecessary. However, if you have newly purchased them and are unsure about tipping them, you can easily rub them lightly.
  • Once the molds are filled, we stack them on a baking sheet and put them in an oven preheated to 329°F.
  • Bake for about 10 minutes; of course, it depends on the type of oven. Immediately after baking, carefully knock the nuts out of the molds and let them cool. One dose should be enough for about 74 to 80 walnut halves.

Nut filling for cookies

Since they are filled nuts, they need a proper filling, and there is no better and more suitable one than the walnut one.

It’s simple, quick, and bombastic in taste.

What will you need for the walnut cream?

  • 1/2 cup of fresh butter
  • 1/4 cup of powdered sugar
  • 1 egg yolk
  • 1/2 cup ground walnuts
  • 1/2 cup of baby biscuits
  • 1 teaspoon of rum

How to do it:

  • Put the softened butter cut into cubes in a bowl, add the icing sugar and the egg yolk, and whisk together into a foam.
  • Then sprinkle the ground walnuts, add the sponges you have previously mixed into crumbs, and sprinkle with rum (those who like a stronger taste can add more than just 1 teaspoon).
  • Mix thoroughly, and you’re done. Then, you must join two walnut halves with this filling, stack them in a bowl, and let them sit in the cold.

Candy made from egg whites and nuts (meringue)

We bake a lot of Christmas cookies, and in most cases, only egg yolks are added, so the egg whites gradually accumulate in our fridge.

Don’t just let it sit idle. As soon as you finish baking the type with the yolk, process the whites into the next type of candy.

What will you need for the walnut meringues?

  • 6 – 8 egg whites
  • 1/2 cup ground walnuts
  • 5 spoons of powdered sugar
  • pinch of salt

Method:

  • Nothing can go wrong with this recipe. We take a clean and mainly dry bowl, add the appropriate number of egg whites, add a pinch of salt, and use electric whisks to beat perfectly stiff snow.
  • Grind the nuts into a fine powder in a blender. Mix with powdered sugar and mix into stiff snow in parts.
  • Then, using a spoon or a pastry bag, form small meringues on a baking sheet lined with baking paper. Bake in an oven heated to 248°F for approximately 15 to 20 minutes. Baked meringues are very tender and have a luxurious taste.

You can dip the bottoms of the meringues into the chocolate coating. They taste even better.

Glued nut cookies

There is never enough sugar, which applies doubly to the sticky one. We regularly make the classic Linnaeus and various other types that stick together, but the walnut one is unrivaled, like everything with nuts in it.

What will we need?

  • 1 cup all-purpose flour
  • 1 cup of butter
  • 1/2 cup of ground walnuts
  • 1/2 cup of powdered sugar
  • 1 egg yolk (if they are small, then preferably 2)
  • powdered sugar for decoration

Method:

  • Mix flour with icing sugar, and add ground walnuts, softened butter, and egg yolk.
  • We make smooth, non-sticky dough on a rolling pin or in a bowl, which we store in a bag and leave to rest in the refrigerator until the next day.
  • The next day, let the dough loosen slightly, put it on a floured rolling pin, and roll it out into a sheet about 0.2 inches thick.
  • Using the molds, always cut out the shapes as you like so that the same pair fits together for gluing. Flowers, stars, or toothed wheels are ideal, but that depends on each housewife’s imagination.
  • Place the individual pieces on a baking sheet lined with baking paper and place in an oven preheated to 356°F. Bake for about 5 to 6 minutes until golden.
  • Let the baked cookies cool down, and only then glue them together.

Nut Cream for Marmalade Cookies:

  • 1 glass of marmalade (Rose, Hip or Currant jam)
  • 2 tablespoons of nut liqueur
  • 2 to 3 tablespoons of ground walnuts

Method:

  • Tip the marmalade into a bowl and place it on a pan of water to heat it in a water bath.
  • When the marmalade softens and heats up, stir in the nut liqueur and ground nuts to thicken the cream.
  • Let the mixture cool and then glue two pieces of nut candy together.

You can also sugar the pastry or cover it with a chocolate coating. Get inspired by our cookie frosting recipes.
